It all began in Michele Gualtieri’s childhood, in his nonna’s kitchen—a warm and welcoming place where her love for Italian cooking ignited a passion that would shape his life and future.
As his love for cucina Italiana grew, so did his passion for helping others discover the same appreciation for pasta and Italian culture. In 2018, after many years of hard work, learning, and refining his skills in Michelin-starred kitchens, in Italy, London and Bangkok, Michele launched a pasta cooking class in Florence right out of his grandmother’s apartment in the heart of Florence.
Word quickly spread about this authentic, cultural experience—learning to make pasta like a true Italian—and soon, demand grew beyond the walls of Nonna’s kitchen. Then, in 2019, the passion and excitement for this unique experience reached a boiling point. Michele opened his first official location in the heart and soul of Florence—where Pasta Class Florence was born.
As pasta lovers started flooding in, lesson by lesson, over a short period of time, Michele then began hosting pasta-making pop-ups around the world, each one sharing a little piece of Florence with new audiences.
Today, the workshop continues to serve up the rich, full flavor of an authentic Italian pasta-making experience. With the support of a dedicated team and the reach of online content and new ventures, we continue to share our love of Italian cooking with a growing global audience.

Born in Bologna, the home of true handmade pasta, she passed down to me not only her techniques and recipes, but also her love and passion for Italian cuisine.
After many years working in Michelin-starred restaurants in London and Italy, I felt it was time to return to my roots, to the place where my true passion for food was born. That’s how I opened a workshop in the heart of Florence, where today I offer fresh pasta cooking classes, but above all, I share my love for pasta with anyone eager to learn!”

Andrea is a chef and pastry chef born and raised in Milan, with roots in Southern Italy.
His cooking philosophy has been shaped by experiences across Italy and in countries such as Australia, New Zealand, and England, working in Michelin-starred restaurants and luxury hotels.
In every dish, Andrea brings a touch of tradition, inspired by his grandmother’s teachings. He looks forward to taking you on a journey into Italian cuisine!

RIZZARDI
Born and raised in the Belluno area, Davide has lived for many years in Canada and still divides his time between Montreal and Florence.
He began his career in 2003 and since then has worked in all types of restaurants, first in Italy and then in Canada. Three years ago, he decided to take a new path, teaching cooking and culinary techniques worldwide.
Today, he is one of our instructors and brings his great passion for cooking into every class.

STRAZZULLO
Simone comes from a small town in Maremma, Southern Tuscany, and is driven by a deep passion for cooking and strong determination.
Despite his young age, he has worked in the restaurant industry for many years. Since childhood, he dreamed of becoming a chef to share memories and experiences through food.
After working in a two-Michelin-starred restaurant and as head chef in London, Simone returned to his homeland and became part of the Pasta Class Florence team.
